been having this problem lately too. asked my coworker who used to be a sandwich artist; she said mayo, peppers, onions, pickles (!) are all choices she regularly makes - then she went and bought one for lunch.
i've always wondered this, too. i imagined it being similar to an italian dish, which didn't make choice of toppings easier.
as a italian i can tell you, you don't put anything on an italian sub other than maybe some parm.
